The following recipe will make approximately one cup of healthy chimichurri sauce and takes around 10 minutes to prep.

Ingredients

5 cloves garlic (minced)

1/4 Cup parsley (chopped)

1 large sprig of fresh oregano (or 1/2 Tbsp dried oregano)

1/2 Cup Avocado Oil

2 Tbsp rice vinegar

1/2 Tbsp crushed red pepper

1/4 Tbsp salt

2 Tbsp chopped cilantro (optional)

1 Tbsp fresh lime juice (optional)

1 jalapeño or terrano pepper, seeded and finely chopped (optional)

Directions

1. Simply combine all of the above ingredients in a bowl or food processor and mix until a saucy consistency is reached. It's that easy!
2. Enjoy immediately and then transfer to an airtight container to refrigerate.
Note: for an even creamier texture, add half an avocado.
