Berry Oat Crumble Bars

Ingredients

2 cups BBF Oat Flour Blend

½ tsp baking soda

¼ tsp salt

6 ounces butter

½ tsp vanilla extract

2 cups brown sugar

2 eggs

2 1/2 cups rolled oats

1 ¼ cup sliced almonds

1 cup fresh blueberries

1 cup fresh raspberries

Directions

Preheat the oven to 350 degrees.
Combine all dry ingredients in a mixer with the paddle attachment and mix. Add in butter and mix until pea-sized. Add eggs and vanilla, and mix until crumbly. Press ½ of the mixture into a flat quarter-size baking sheet lightly sprayed with cooking spray. Par bake the bottom crust for 12-15 minutes until golden brown. Remove from the oven and let cool for about 10 minutes. Spread fresh blueberries and raspberries over the bottom crust. Sprinkle the remaining dough over the berries and gently press the top layer so it will stick to the berries. Bake for 12-15 minutes more or until lightly browned on top. Remove from the oven and let cool before cutting into squares.
