1/2 cup full fat coconut milk
1 cup blueberries
1 tsp BBF Naturally Refined Coconut Oil
1 lime, juiced
1-3 Tbsp honey or other sweetener
1/4 tsp lime zest
1. Combine the chia seeds and coconut water in a bowl, mix, set aside and let thicken. 2. In a blender combine, the coconut milk, blueberries, coconut oil, lime juice and honey. Blend until smooth. 3. Strain the mixture into a bowl. Combine the smoothie mixture, the chia seed coconut water mixture and zest and stir. 4. Pour into popsicle molds. Freeze for at least 8 hours. 5. Enjoy!
