Chia Strawberry Jam

2 Tbsps chia seeds

2 cups trimmed fresh strawberries

1 Tbsp lemon juice

2-3 Tbsps agave or honey


1. Add strawberries to a saucepan over medium-high heat and cook until the berries break down and the mixture bubbles. You can use the back of a spoon or potato masher to mash the berries and create your desired consistency.

2. Stir in the chia seeds and lemon juice. Then taste, and add sweetener if desired. If your berries are sweet, you might not need to add any sweetener.

3. Remove the mixture from the heat and let the mixture cool and thicken for about 5 to 10 minutes. You can use it immediately or let it cool completely before transferring it to a sealed container and placing it in your refrigerator. The jam will last for up to 1 week.
