Chicha De Maca – Fermented Maca Drink

Dairy Free Gluten-Free Vegan Vegetarian



1/4 cup purple corn flour

1/4 cup Maca powder

3 Tbsp Quinoa

1/2 cup sugar

1 cinnamon stick

5 whole cloves

12 cups water


1. In a large pot, boil water, corn flour, Maca powder, quinoa, cinnamon sticks, and whole cloves for about 2 hours.

2. Allow the mixture to cool, strain and place in a large jar add the sugar and stir to dissolve.

3. Pour into a large jar with a lid or multiple mason jars with lids allow to ferment for 2-6 days.

4. Serve well chilled.
