1/2 Cup BBF* Naturally Refined Organic Coconut Oil
2 1/4 Cup whole wheat pastry flour
3/4 Cup BBF* Organic Agave
1/2 tsp baking soda
1 tsp salt
1 Tbsp Vanilla
2 Cup semisweet chocolate chips
1/2 Cup chopped pecans (optional)
1. Preheat oven to 350°F.
2. In a large bowl, combine coconut oil, agave, eggs and vanilla, mixing thoroughly. Mix in flour, baking soda and salt, stirring until smooth.
3. Stir in the chocolate chips (and optional pecans).
4. Drop by teaspoonfuls onto a cookie sheet about 1 inch apart, flatten and bake for 7-10 minutes. Makes 24 cookies.
Tips and Notes:
These cookies will not spread as much as other cookies when baking so flatten cookies with back of spoon on the cookie sheet. For a completely sugar free version, try sugar free chocolate chips.
