Date Carmel Sauce

9 large medjool dates, pitted - 5½ ounces

1 1/2 cups oat milk

1 1/2 tsp vanilla extract

1/8 tsp fine sea salt

1 to 2 Tbsp BetterBody Foods Golden Monk Fruit


1. Place pitted dates in a bowl and cover with boiling water.
2. Set aside for 15 to 20 minutes to soak, then drain well.
3. Combine the softened dates, oat milk, vanilla, and salt in a blender. Blend on high speed until smooth.
4. Pour the caramel into a small, heavy-bottom saucepan. Taste for sweetness, and add BetterBody Foods Golden Monk Fruit to desired sweetness.
5. Slowly bring the mixture to a simmer, whisking frequently. Cook for about 3 minutes or until fragrant and slightly darker in color.
6. Whisk in more oat milk if the caramel sauce is thicker than you like. Serve warm or chilled.
