1 cup (2 sticks) Vegan Butter
¾ cup brown sugar
¾ cups white sugar
1 tsp vanilla extract
2 large eggs
2 cups vegan chocolate chips
Preheat oven to 325 degrees Prepare a 9x13 baking dish with pan spray In a separate bowl combine all the dry ingredients, flour, fruit and fiber, baking soda, salt and set aside. In a mixing bowl cream vegan butter and sugars till light and fluffy. Add eggs and vanilla and continue mixing till fully incorporated. Add dry ingredients and mix until combined. Add in chocolate chips and mix just till combined. Spread batter in prepared baking dish. Bake for 25-30 minutes until golden brown and toothpick inserted in middle comes out clean.
