1 head of cauliflower
1/2 Cup parmesan cheese
2 Tbsp BBF Organic Coconut Flour
1/2 tsp salt
1/2 tsp garlic powder
1 heirloom tomato
1 sliced fresh mozzarella
1 bunch chopped basil
1 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
Dash salt and pepper
1. Preheat oven to 400°F.
2. Line 2 flat baking sheets with parchment paper.
3. Pulse cauliflower in a food processor until fine. Steam for about 12-15 mins. Drain well. When cooled enough to handle, place in a cheesecloth and wring out excess water (paper towels work too).
4. Combine cauliflower, eggs, cheese, coconut flour, salt and garlic powder. Divide into 4 parts. Spread into four circles resembling pizza dough. Bake 20 mins, until golden crisp edges.
5. Layer sliced tomato, sliced mozzarella, fresh basil, and drizzle with olive oil and balsamic vinegar.
