3 large russet potatoes
1 large bell pepper, chopped
1 small onion, chopped
1 Tbsp BBF Virgin Organic Coconut Oil
salt and pepper to taste
1/4 Cup pepper jack cheese, shredded
1. Scrub potatoes and chop into bite sized pieces. Fill a medium sized pot with water and heat until boiling. Add potatoes and boil for 10 minutes. Drain.
2. Heat oil in a large skillet over medium heat. Add potatoes, onions, and pepper and sauté until tender. Season with salt and pepper.
3. Sprinkle with cheese and cover to melt.
