8 cups air popped popcorn (1/2 cup kernels)
1/4 cup coconut oil
1/4 cup maple syrup
1/4 cup honey
1/4 cup BBF coconut sugar
1 1/2 tsp kosher salt
1/2 tsp baking soda
1/4 tsp vanilla
Spray a baking sheet with pan spray. Preheat the oven to 300 degrees.
Pop popcorn in the air popper. Transfer into a greased bowl.
In a medium saucepan, add coconut oil, honey, maple syrup, coconut sugar, and salt. Bring to a boil over high heat and boil for one minute. Turn the heat off and add the vanilla and baking soda, stir as you see it grow into a light-colored cloud, and keep mixing.
Pour caramel mixture over the bowl of popcorn. Mix well and spread out onto the baking sheet. Bake for 30 minutes, stirring every 6-8 minutes making sure everything gets cooked evenly. Let cool for 20 minutes before eating.
