3/4 cup full fat coconut milk
1/2 cup vanilla almond milk
1 Tbsp maple syrup
1/2 tsp vanilla extract
1/2 cup pineapple chunks
1/4 cup shredded coconut
1. In a bowl combine all ingredients. Mix well and cover. 2. Refrigerate for a couple of hours (overnight is best. This allows the chia seeds to thicken the mixture. 3. Before serving top with extra pineapple chunks and shredded coconut. 4. Enjoy!
