4-5 lbs pork shoulder or pork butt (cubed)
40 corn tortillas
—— Marinade Ingredients ——
1-2 Cups fresh pineapple
1/2 Cup soy sauce
1/4 Cup balsamic vinegar
3 Tbsp BBF* Naturally Refined Avocado Oil
1 Tbsp fresh ginger
1 sweet onion
2/3 Cup BBF* Organic Agave
1 Bunch fresh cilantro
3 jalapeños (seeded)
8 cloves garlic
1. Pulse all marinade ingredients in a blender and blend until slightly chunky.
2. Put pork into slow cooker or pressure cooker and add marinade.
3. Cook in pressure cooker for 1 hour or in slow cooker for 6 hours on high.
4. Shred pork using two forks. Serve with corn tortillas and Pineapple Mango Salsa.
