Roasted Carrots

2 pounds carrots, peeled

3 Tbsp BetterBody Foods Avocado Oil

Salt and pepper to taste

1 tsp fresh thyme leaves, chopped

½ tsp oregano

3 Tbsp finely chopped flat-leaf parsley


1. Heat the oven to 400 degrees. Lightly oil a sheet pan or a baking dish large enough to fit all the carrots in a single layer with a little BetterBody Foods Avocado Oil. Place the carrots on the tray, drizzle with remaining avocado oil, and sprinkle with salt, pepper, thyme, and oregano.
2. Place in the oven for 20 to 30 minutes. If the carrots are not yet tender, turn the heat to 375 degrees and return to the oven for 5 to 10 more minutes. Add the parsley, stir gently, and taste and adjust salt and pepper. Serve hot, warm, or at room temperature.
