Roasted Tomato, squash “Bacon” Sandwich

1 medium zucchini sliced

2 large tomatoes - sliced

1 Delicata squash or acorn squash (peeled) and sliced

4 romaine leaves

8-10 slices of Vegan Bacon - cooked and cooled

1/2 cup plant junkie canola spread

4 4 inch Baguettes sliced for sandwiches


1. Preheat the oven to 425 degrees.

2. Place the sliced squash, tomatoes and zucchini on a tray and drizzle with oil. Place in the oven to roast for about 12-15 minutes or till veggies are tender. Remove from the oven and cool slightly.

3. Assemble the sandwiches layering with lettuce and the roast vegetables then topping with the sliced “bacon” Spread the top piece of bread with the plant junkie spread and sandwich together.
