1 cup coleslaw cabbage mix
2 oz shredded chicken (about 1/2 cup)
1/3 cup BBF organic quinoa
1 green onion, chopped
1/4 shelled edamame
2 Tbsp cilantro
1/4 cup cucumber or celery
1/4 mandarin oranges (naturally sweetened, not in syrup)
1. In a large bowl, combine cabbage, chicken, quinoa, onion, edamame, cilantro, and cucumber.
2. In a small bowl, whisk pb2, water, and honey together. Whisk in mayo, and then vinegar and soy sauce. Toss on salad.
