6-8 firm Roma tomatoes, cut into bite-sized chunks

1 seedless cucumber, diced

2/3 bunch Italian parsley, chopped

1/2 red onion, finely chopped

1/3 Cup Italian Dressing


1. Mix ingredients in a bowl. Pour in Italian dressing, toss and serve chilled or at room temperature.


One handful of baby spinach, chopped; and fresh mozzarella cheese (cubed or balls).
