6 mandarin oranges, peeled and sectioned
2 cups strawberries, sliced
1 pineapple, cut into bite-size chunks
5 kiwi, sliced
3 mangoes, cut into bite-size chunks
Creamy Poppy Seed Dressing
1/2 cup passion fruit puree
1/4 cup agave
1/2 tsp fresh grated ginger
2 Tbsp plant junkie canola spread
6 oz coconut yogurt
1/2 tsp poppy seeds
1. Zest the lime with a zester or fine grater. Add to a small bowl. Cut the lime in half and squeeze the juice into the bowl, add in the agave, ginger, passion fruit puree, plant junkie spread, coconut yogurt and poppy seeds to juice mixture and whisk until combined. Set aside or place in the refrigerator if serving later.
2. Prepare remaining fruit. Slice strawberries and kiwi. Section oranges. Cut pineapple and mango into bite size chunks. Place fruit in a large bowl.
3. Pour dressing on top of fruit about 30 minutes before serving. Gently toss to coat.
4. Serve and enjoy!
