1 4-5 lb watermelon - cut into 1" cubes
1 red onion - cut in half and thinly sliced
1/4 cup red wine vinegar
1/2 cup BBF Naturally Refined Avocado Oil
1/2 cup roughly chopped mint leaves
4 oz feta cheese crumbles
salt & pepper to taste
1. Cut your watermelon into 1” cubes and place in a large bowl.
2. Add your thinly sliced red onions, and feta cheese crumbles.
3. In a small bowl, whisk together your avocado oil and red wine vinegar and season with salt and pepper.
4. 10 minutes before you are ready to serve, pour the dressing over your watermelon mixture. Toss to combine. Add the mint and squeeze the lime juice on top. Gently toss to combine.
