Crust
1 1/2 cups almond flour
1/4 cup BetterBody Foods Coconut Flour

1/3 cup coconut oil, room temperature
1/4 tsp salt
Filling
3 eggs + 1 egg yolk
3/4 cup fresh squeezed lime juice
1/2 cup maple syrup or agave
2 Tbsp lime zest
2 Tbsp BetterBody Foods Coconut Flour, sifted
1. Preheat oven to 350F and line a 9×9 baking dish with parchment paper or nonstick spray.
2. Mix all of your crust ingredients in a bowl until well combined and the ingredients come together to form a soft dough.
3. Press into the bottom of the 9×9 baking dish and bake for 15 minutes.
4. While the crust is baking, whisk together all the filling ingredients, adding the sifted BetterBody Foods Coconut Flour last. Whisk until all the clumps are gone.
5. Once the crust comes out of the oven, pour the filling immediately on top.
6. Lower oven temp to 325F and bake for 20 - 22 minutes or until filling is set. A little jiggle is ok!
7. Let cool at room temperature for 30 minutes, then transfer to fridge for at least 3 hours.
8. Add powdered sugar, cut, and serve! Note that for a thicker bar, double the filling amount and add 10 to 12 minutes to the cooking time.
