White Chocolate Raspberry Protein Muffins

Ingredients

1/2 cup applesauce

1/2 cup maple syrup, or honey

1/4 cup nut butter

1 egg

1 tsp instant coffee powder, optional

pinch of salt

3/4 cup oat flour, or preferred flour

1/3 cup BBF Organic Plant Protein

1/4 cup BBF Organic Cacao Powder

1 1/2 tsp baking powder

1 cup milk of choice

1/4 cup white chocolate chips

1/2 cup fresh raspberries

Directions

1. Preheat the oven to 375 degrees.

2. In a large mixing bowl add the apple sauce, maple syrup, and nut butter. Stir to combine.

3. Sift together oat flour, protein powder, cocoa powder, instant coffee, salt and baking powder, add to the wet ingredients and stir to combine while gradually pouring in the milk. Adjust with more milk if the batter is too dry. Fold in white chocolate chips, remembering to keep a few to top the muffins.

4. Scoop into muffin molds and sprinkle with white chocolate chips and top each muffing with a few fresh raspberries.

5. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Remove from oven and let cool.
